Key Lime Cupcakes
These cupcakes are for anyone who likes Key Lime. They're a light, refreshing dessert perfect for summer.
They're easy to make so, get out your bowl and spatula and start making these light, lovely delights....you'll be glad you didand so will everyone else.
White cake mix
1 can of sweetened condensed milk
8 oz coconut milk (usually is found in cocktail mixes isles)
4-5 key limes zested
Whipped topping
1 -15oz can crushed pineapple- drained
12 oz shredded coconut
Place cupcake liners in pans and follow directions on the box. While cupcakes are still warm poke holes in the cupcakes. I use a skewer. Mix sweetened condensed milk, 1/2 grated lime zest (I squeeze in the juice from the limes too....it gives it more flavor), and coconut milk and spread over cupcakes while still warm. Cool and refrigerate over nite. Next day sprinkle crushed pineapple over cupcakes and topped with whipped topping and remaining lime zest. Keep refrigerated.
